A few years ago, I wrote a series of posts about baking my favourite Christmas recipes. People seem to like them so every year, usually around November I reblog them.
Last year I wasn’t able to get my favourite Robertson’s Fruit Mince for the mince pies. I looked everywhere for it. Well, that’s not quite true. I am very limited in where I can go. I started trying to order it from Coles, the supermarket I get my deliveries from early in November. They didn’t have it so I looked in Woolworths in Wynyard. They didn’t have it. I looked in Coles in Burnie. They didn’t have it. I even asked supermarket staff but they said they didn’t know when they would have it. In the end I had to give up and use a Coles house brand fruit mince. I was grateful that they had their own brand but although it was OK it wasn’t the same. There were so many supply chain issues last year. Even now those haven’t completely gone away so I’ve started looking for it already.
This year will also be the first time that I cook everything in my new oven. Christmas Day is going to be so much easier now that I don’t have to try and cook everything in the convection microwave. It made for a lot of timing issues. It’s so nice to have something in the oven and something in the microwave and something else in the air fryer or on the stove and they all finish at the same time.
Note: I was able to get the Robertson’s Fruit mince this year although I won’t be making mince pies until closer to Christmas. I have made the Christmas cake but haven’t iced and decorated it as yet. I’m hoping I might talk Naomi into helping me with that as she is more artistic than I am. I still have to make the Christmas pudding which I had planned to do today but we got up late and as it takes 6 hours on the stove to cook one, I prefer to start it earlier in the day.
